I'm embarrassed to admit, but for the longest time, I thought hearts of palm were part of an artichoke. Um, despite the name practically spelling it out. Hearts of palm are the core of palm plants.

I love the heart of palm "rice" and "pasta", but of course, if you are doing keto they are a nice substitute for those things. Nothing can replace rice and pasta, but these do a good job. But to be fair, you can't eat them by themselves...plain....no :) They need to be in something saucy, like beef with broccoli or something like that...then they are a nice filler. They also work good in soups....but by themselves, not so much :)
