Savory roasted chickpeas, roasted garlic hummus, cucumbers, tomatoes, and tzatziki sauce, all wrapped up in warmed pita bread - it's delish!
We're always looking to add more veggies, legumes, and plant-based meals to our lives. (You know, to balance out the chocolate.) These wraps are an easy way to do that!
We've reviewed two of the ingredients for these wraps: Trader Joe's Greek Chickpeas and Trader Joe's Vegan Tzatziki Dip.
A heads-up that in our store, Trader Joe's Vegan Tzatziki Dip is located near the gyro meat, not by the tubs of hummus where other dips are.

How to Make Trader Joe's Mediterranean Roasted Chickpea and Veggie Wraps

First, you'll need to roast the chickpeas. It's as easy as dumping them out onto a cookie sheet and baking. The chickpeas will turn golden and develop an irrresitable little crunch.
Because Trader Joe's Greek Chickpeas are perfectly pre-seasoned and packed in oil and lemon juice, there's no need to add any seasoning...even salt...or cooking oil.
While the chickpeas are roasting, cut grape tomatoes in half and slice a cucumber.
Once the chickpeas are roasted, warm the pitas. I like to do this directly over a low flame on our gas stove. You can also heat them in a dry skillet or wrap them in a damp paper towel and heat in the microwave.
We're not opening the pitas up and stuffing the contents of the wrap in the pocket.
Spread Trader Joe's Roasted Garlic Hummus on one side of each pita.
Sprinkle with roasted chickpeas.
Add veggies on one half of the pita. Spoon Trader Joe's Vegan Tzatziki Dip over the top.
Fold and devour. HINT: Try these with Trader Joe's Dill Pickle Chips on the side! The dill in the chips pairs perfectly with the tzatziki and Greek chickpeas!
Trader Joe's Mediterranean Roasted Chickpea and Veggie Wraps
YIELD: 4
PREP TIME: 10 minutes
COOK TIME: 22 minutes
1 can Trader Joe's Greek Chickpeas
1 English cucumber
2 handfuls grape tomatoes
4 Trader Joe's Pita Breads (original or wheat)
1 tub Trader Joe's Roasted Garlic Hummus
1 tub Trader Joe's Vegan Tzatziki Dip
Preheat oven to 400. Spoon chickpeas out of the can and onto a rimmed cookie sheet. Bake for 22-25 minutes. Use a thin spatula to scrape from the pan. They will be golden and slightly crunchy.
Meanwhile, peel, halve, and slice the cucumber. Cut tomatoes in half.
Once the chickpeas are cooked, heat pitas, one at a time, directly over a low gas flame or in a dry skillet. If cooking directly over flame, watch constantly, heat for a few seconds, and flip using metal tongs. Place warmed pitas in a dish towel while heating the rest.
Spread 2 tablespoons hummus onto one side of each pita. Sprinkle with roasted chickpeas.
Add cucumber and tomatoes to one-half of each pita. Spoon tzatziki dip over the top. Fold and eat!
One more thing I love about these is that you can easily make one or two and save the chickpeas for the next day or later in the week!
